Fish Florentine

INGREDIENTS:
1 cup cooked, drained chopped spinach
1 tbsp instant minced onion
1/4 tsp each garlic powder and nutmeg
Dash salt and pepper
1/4 cup (4 tbsp) sour cream
7oz cod, haddock, halibut or red snapper
3 tbsp grated Parmesan cheese
2 tbsp chopped parsley
1/2 tsp Italian mixed herbs
8 slices tomato

DIRECTIONS:
1. Preheat oven to 400 degrees.  Mix spinach with onion, garlic powder, nutmeg, salt, pepper and sour cream.
2. Spread spinach mixture over bottom of small shallow baking dish.
3. Arrange fish over spinach.
4. Cover with tomato slices.
5. Combine Parmesan cheese, parsley and herbs.  Sprinkle mixture over tomatoes and fish.
6.  Bake 15 minutes, or until fish flakes when tested with fork.

YIELD:
4 servings
