Zucchini with Green Peppers, Tomatoes

INGREDIENTS:
|
3 to 4 Tbsp. vegetable oil
1 garlic clove
1 medium onion, sliced
2 medium zucchini
|
1 large green pepper, sliced
1 (8 oz) can stewed tmatoes
salt and pepper to taste

DIRECTIONS:
Saute onion and garlic in oil until soft, but not brown. Add green pepper and cook, stirring constantly over medium heat for 3 or 4 minutes. Trim off ends of zucchini and cut into 1/4 to 1/2 inch rounds. Addzucchini and cook 3 minutes more. Add tomato sauce and seasonging and cook only until sauce is heated.
