Poor-Man's Lobster

INGREDIENTS:
1# haddock or schrod (without skin) cut into 1" chunks

One (tube) package of Ritz crackers crushed

1/2 cup butter or margarine or butter - melted

DIRECTIONS:
Spray glass/pyrex pan (round, square or rectangle, etc.) with Pam cooking spray or coat with butter/margarine.

Dip fish chunks into melted butter and then into crushed crackers.

Place in one tight layer in baking dish.

Bake approx. 20 minutes at 325 (fish flakes with a fork when done).

YIELD:
2-3 servings
